Dunkin' Platters
There's something about this recipe for cowboy cookies that makes them perfect for dipping into a nice cold glass of milk. Maybe it's the oats or maybe it's the nuts and chocolate chips scattered throughout. Whatever it is, these Dunkin' Platters are simply delicious. Big and satisfying enough for even the hungriest of cowboys, these cowboy cookies are so tasty they never stick around for long. Make a dozen or so tonight and watch them disappear from the cookie jar!

Ingredients
- 1 cup shortening
- 1 cup sugar
- 1 cup light brown sugar, firmly packed
- 2 eggs
- 1 1/2 teaspoon vanilla extract
- 1 1/2 cup flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 cup oatmeal (any type but instant)
- 1/2 cup chopped peanuts, optional
- 1/2 package milk chocolate chips (about 3 ounces)
- 1/2 package butterscotch or peanut butter chips (about 3 ounces)
Instructions

Preheat oven to 350 degrees F.

Cream shortening, sugars, egg and vanilla.

Add all dry ingredients except the oatmeal, nuts and chips; mix thoroughly.

Add oatmeal and mix until combined. Add nuts and chips and mix gently.

Spray cookie sheets lightly with nonstick cooking spray and drop dough onto sheets by rounded tablespoonfuls.

Bake for 10 minutes or until lightly golden.
