Peppermint Sugar Cookie Bites
The best way to cool off in the summer is eating a handful of some cool Peppermint Sugar Cookie Bites. Whoever said candy canes were only for Christmas? This recipe takes a spin on the traditional sugar cookies that everybody loves by adding a refreshing sprinkle of crushed candy cane on top. These sweet minty bites of goodness will give your taste buds everything they've been looking for- sugary flavors with a peppermint aftertaste. Ingredients
- 1 cup unsalted butter, room temperature
- 1 cup light brown sugar
- 1 teaspoon vanilla bean paste
- 2 cup flour
- 4 regular sized candy canes, crushed
- 8 ounce white chocolate, chopped
- 2 teaspoon cocnut oil
Instructions:

In the bowl of a stand mixer beat the butter and sugar until light and fluffy.

On low speed add the flour, vanilla and crushed candy canes. Mix until full incorporated.

Using a small cookie scoop (about 2 tablespoons) form small smooth dough balls. Place dough balls on a baking sheet lined with parchment. Chill for 1 hour until dough balls are firm.

In a microwave safe bowl place the chopped chocolate and coconut oil. Heat for 30 seconds stir continue to melt the chocolate in 15 second intervals until the chocolate is melted.

Dip the bottom of the cookie bite into the melted chocolate then dip or sprinkle with the additional crushed candy canes. Place on a baking sheet lined with parchment and chill in the fridge for about 15 minutes to firm up.
