Ingredients
- 2 medium potatoes, peeled and cut into 1-inch cubes
- 2 pounds lean ground beef
- 1 large onion, finely chopped
- 1 1/2 cup ketchup, divided
- 3/4 cup butter-flavored crackers, crushed
- 2 eggs
- 2 teaspoons salt
- 1/3 cup firmly packed brown sugar
- 1/2 teaspoon prepared mustard
Instructions

Place the potatoes in the bottom of a slow cooker.

In a large bowl, combine the beef, onion, 3/4 cup ketchup, cracker crumbs, eggs and salt. Mix well.

Place mixture over the potatoes and pat down to form a loaf in the slow cooker.

In the same mixing bowl, combine the brown sugar, mustard and the remaining 3/4 cup ketchup and mix well.

Spread over top of loaf, cover, and cook on the Low setting for 6 to 10 hours.
- Drain off excess liquid and serve.

I make this all the time. I also layer potatoes, onion, green peppers then the meat mixture. Small can hunts sauce over all. Great for leftovers.
