One Pot Chicken Dinner

Ingredients
- 3 pound chicken, cut into pieces
- 2 tablespoon unsalted butter, softened
- 2 tablespoon olive oil
- 2 cup chicken broth
- 2 cup carrots, diced
- 1 medium onion, halved and slivered
- 2 tablespoon garlic, minced
- 1 tablespoon fresh tarragon, chopped
- salt and pepper to taste
- 2 tablespoon cornstarch
- 2 tablespoon fresh tarragon or parsley, for garnish
Instructions
- Rinse chicken pieces and pat dry. Place in slow cooker, along with the butter, olive oil, chicken broth, carrots, onion, garlic, tarragon, salt, and pepper. Stir to combine. Cover and cook on high heat for 4 1/2 hours, or until cooked through.
- Remove chicken pieces from the slow cooker and keep warm. Mix the cornstarch with 2 tablespoons cold water in a small bowl. Whisk into the sauce in the pot and continue cooking, covered, 30 minutes or until the sauce is thickened slightly.
- Serve the chicken topped with the sauce and sprinkled with tarragon or parsley.
