Ingredients
- 4 cups water
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 cans (14.5-ounces) vegetable broth
- 2 medium carrots, cut into 1/2-inch pieces
- 1 medium potato, peeled and cut into 1/2-inch pieces
- 1 medium onion, finely chopped
- 1 medium celery stalk, cut into 1/2-inch pieces
- 2 1/4 cups lentils, rinsed
- 6 ounces sliced Canadian-style bacon, coarsely chopped
Instructions
- Mix all ingredients in 3 1/2- to 4-quart slow cooker.
- Cover and cook on low heat setting 8 to 9 hours or until lentils are tender. Stir well before serving.
