    Ingredients

    • 2 carrots
    • 1 red bell pepper
    • 1 red onion
    • 4 boneless chicken breasts, skinned
    • 3 T Tapioca
    • 8 ounces canned crushed pineapple, undrained
    • 2 T fresh or candied ginger, minced
    • 1/3 c dark brown sugar
    • 1/3 c red wine vinegar
    • 1 T soy sauce
    • 1 t chicken bouillon
    • 1 t garlic clove, crushed
    • 1 green bell pepper
    • 10 cilantro leaves
    • 4 gherkin pickles, cubed

    Instructions

    Put vegetables in bottom of slow cooker. Sprinkle tapioca over vegetables. Place chicken on top. Combine all other ingredients in a small bowl. Pour over chicken. Cover slow cooker and turn to low and cook for 8-10 hours. Before serving make rice. Serve over rice. Leftovers can be reheated in microwave. To cook in oven: Put vegetables in bottom of a greased pan. Sprinkle vegs. with tapioca. Add chicken to pan. Combine all other ingreds. except rice in a small bowl. Pour over chicken. Cover pan tightly with foil. Bake in 300 deg. oven for 2 hours.
