Fiesta Tamale Pie

Try this easy slow cooker version of the classic tamale pie. This tasty dish is perfect for a family meal or on a party buffet.

Ingredients

  • 1 pound extra-lean ground beef
  • 3/4 cup yellow cornmeal
  • 1 cup beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 14 to 16 ounce jar thick and chunky salsa
  • 16 ounce can whole-kernel corn, drained
  • 1/4 cup sliced ripe olives
  • 1/2 cup shredded reduced-fat Cheddar cheese

Instructions

  1. In a large bowl, mix cornmeal and broth; let stand 5 minutes.
     
  2. Brown ground beef in a skillet.
     
  3. Stir in beef, chili powder, cumin, salsa, corn, and olives.
     
  4. Pour into a slow cooker. Cover and cook on LOW 5 to 7 hours or until set.
     
  5. Sprinkle cheese over top; cover and cook another 5 minutes or until cheese melts.
