Italian Beef in a Bucket

Ingredients
- 3 1/2 to 4 pound beef roast, sirloin tip or rump
- 12 to 16 ounce jar Italian giardiniera, mild or hot
- 12 to 16 ounce jar pepperoncini
- 1 envelope zesty Italian salad dressing mix
- 10 3/4 ounces can beef broth
Instructions
Place the roast in a 3 1/2-quart slow cooker and mix all other ingredients together, draining oil from giardinera. (When adding giardinera and pepperoncini, use half of each jar for a mild version, or all for a spicy one.) Add all ingredients to the slow cooker. Cover and cook on the low setting for 18 hours. To serve, remove roast from slow cooker. It will probably fall apart, but if necessary, slice it to make sandwiches. Place pepperoncini and giardinera in a bowl to serve along with the meat. Makes 12 to 16 servings.
