Lemon Chicken

Ingredients

  • 1 chicken fryer
  • 2 whole lemons
  • 2 Potatoes
  • 1 Large onion

Instructions

Quarter onion and cut potatoes into 1/2 inch cubes. Place them in slow cooker. Clean chicken and place in crock with the opened end up so that you can fill the cavity while the chicken is in the crock. Place one of the lemons on a clean counter top and crush it with the palm of your hand, rolling the lemon around so that you can feel the inside membranes break. Take a fork and pierce the lemon rind so that the juices will come out when the lemon cooks. Place the lemon inside the cavity of the chicken and repeat the process with the second lemon. Add 1/2 cup of water and cook on high for 3-4 hours or on low for 6-7 hours.
