Ingredients

  • 1 pound lean ground beef
  • 1/4 pound pork sausage
  • 1 egg, slightly beaten
  • 1/4 cup finely chopped leek
  • 1/3 cup fine dry bread crumbs
  • 2 tablespoon taco sauce
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 teaspoon chopped fresh basil
  • 1 large zucchini, shredded
  • 1 medium carrot, shredded

Instructions

In a large bowl, combine beef, sausage, egg, leek, bread crumbs, taco sauce, salt, pepper, basil, zucchini, and carrot. Form into a 5 1/2-inch flattened round loaf. Place loaf on a trivet in a slow cooker. Cover and cook on LOW about 4 hours or until done. Remove loaf and cut into 6 wedges; spoon cooking juices over each serving.
