Normandy Chicken with Apples

Ingredients
- 3 c. apple cider or juice
- 3 (1.8oz) boxes leek soup mix
- 2 tsps dried thyme leaves
- 1/2 tsp grated nutmeg
- 1-1/2 lb red potatoes, peeled and diced
- 4 celery ribs, sliced
- 6 shallots, sliced
- 3 green apples, cored and cut into 16 wedges each
- 3/4 c. dried cranberries
- 2 pounds boneless skinless chicken breast halves, halved crosswise
Instructions
In 4-5 qt slow cooker, combine the apple cider, dry soup mix, thyme and nutmet. Stir to blend well. Add the potatoes, celery, shallots, apples and cranberries. Tuck the chicken pieces down into the mixture. Cover and cook on low heat setting about 8 hrs, til potatoes are tender.
