Ingredients
- 32 ounces package peeled baby carrots
- 1/3 cup frozen orange juice concentrate, thawed
- 3 tablespoons brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon grated nutmeg
- 1 1/2 tablespoon cornstarch
- 1 tablespoon butter
- 2 tablespoons Grand Marnier or other orange-flavored liqueur, optional
- salt
- freshly ground pepper
Instructions
In a 3-1/2 quart electric slow cooker, mix the carrots, orange juice concentrate, brown sugar, cinnamon, nutmeg, and 2 tablespoons water. Cover and cook on the low heat setting about 7 hours, or until the carrots are almost tender. Increase the heat to the high setting. Dissolve the cornstarch in 2 tablespoons cold water and stir into the carrots. Cook, covered, 30 minutes longer, or until slightly thickened. Stir in the butter and liqueur and season with salt and pepper to taste. Serve hot. Makes 8 servings.
