Broccoli Salad with Bacon and Mandarin Oranges

Ingredients
- 1 egg plus 1 egg yolk, slightly beaten
- 1/2 cup sugar
- 1 1/2 teaspoon cornstarch
- 1 teaspoon dry mustard
- 1/4 cup tarragon wine vinegar
- 1/4 cup water
- 3 tablespoon butter, softened
- 1/2 cup Hellmans mayonnaise
- 4 cup fresh broccoli
- 1/2 cup raisins
- 6 slice bacon, cooked and crumbled
- 2 cup fresh mushrooms, sliced
- 1/2 cup almonds, slivered and toasted
- 1 (11-ounce) can mandarin oranges, drained
- 1/2 large red onion, chopped
Instructions

In top of double boiler whisk together egg, yolk, sugar, cornstarch, and mustard.

Combine vinegar and water. Slowly pour into egg mixture, whisking constantly.

Place over hot water and cook, stirring constantly until mixture thickens. Remove from heat; stir in butter and mayo.

Chill.
- Toss dressing with remaining ingredients in serving bowl.
