Crunchy Ramen Coleslaw
Whoever thought to crunch up raw ramen noodles and mix it into coleslaw is a genius. Crunchy Ramen Coleslaw isn't your average easy coleslaw recipe, it's so much more than that. Ramen, sliced almonds and sunflower seeds give this unique oriental coleslaw its crunch. The seasoning packet from the ramen noodles is mixed with other ingredients to make the incredibly flavorful sauce. With cabbage and vegetables in the mix, we can't get enough of this cheap side.

Ingredients
- 1 medium head green cabbage, chopped
- 8 green onions, sliced
- 1 green pepper, chopped
- 1 cup roasted and salted sunflower seeds
- 1 cup slivered almonds
- 2 packages ramen noodles, chicken flavor (uncooked)
- For the dressing:
- 6 tablespoons sugar
- 6 tablespoons white vinegar
- 1 cup olive oil
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 packets chicken flavor seasoning from ramen noodles
Instructions

In a medium bowl, mix together sunflower seeds, almonds and crushed Ramen noodles. Reserve until ready to serve.

In a large bowl, mix together cabbage, green onions and green pepper.

Then prepare dressing and pour over cabbage mixture. Chill until ready to serve.
- Just before serving, add nut and noodle mixture to cabbage.
For the Dressing:

Mix all ingredients well in shaker container. Add to cabbage, onions and green pepper.

I have made this salad for many years and my family absolutely loves it! I generally cook a couple of chicken breast to put in and then it is a meal in one dish.

This is one of my favorite salads of all time-it is addictively delicious. I do think one cup of oil is excessive though. Start with 1/2 cup and adjust to your own taste.
