How to Make Tuna Salad

Let's talk about tuna! In my experience, there are certain occasions in which a tuna salad sandwich is just the perfect meal -- picnics, and potlucks to name a few! Plus, having a quick and easy tuna salad recipe handy isn't a bad life skill to have. This is one of our favorite because it gets a little helping of veggies in the mix too! We are huge fans of avocado and cucumber here at RecipeLion, and this recipe has them both! For a little crunch, some smoothness, and awesome flavor throughout, this recipe takes your regular tuna salad from good to great with very little added effort!

Ingredients
- 3 (5-ounce) cans tuna packed in olive oil, drained and flaked
- 1 rib of celery, diced fine
- 1 small shallot or ¼ red onion, diced small
- 1 tablespoon lemon juice
- kosher salt
- black pepper
- 3 cup baby arugula
- 1 English cucumber, sliced or diced
- 1 avocado, sliced or diced

What you'll need:

After opening the tuna cans, drain most of the oil.

Place the tuna into a medium bowl and flake the tuna.

Cut up your celery, shallot or red onion, cucumber, avocado, and lemon. Wash and dry your arugula and place 2-3 cups it in a larger bowl. Set aside.

Add the celery, shallot or red onion and toss with the tuna.

Sprinkle the lemon juice over the mixture then add a few pinches of salt and pepper to taste. Mix well.

Grab the bowl of arugula you set aside. Top the arugula with the tuna mixture.

Add the cucumber and avocado to the bowl around the side or on top. If you prefer, you can dice up the cucumber and avocado into smaller pieces and mix them into the tuna mixture then toss with the arugula so that everything is more combined.

Add additional lemon juice or salt and pepper if needed.

Enjoy as is or use on sandwiches! Cover with tin foil or plastic wrap if not using immediately and refrigerate
