Marinated Confetti Coleslaw
Nothing's better than a bowl full of colorful salad to serve at a picnic or potluck. Marinated Confetti Coleslaw may not be like some other creamy coleslaw recipes you've made, but it has a unique flavor that everyone will love. Cabbage, tomato, green pepper and green onions make up the bulk of this picnic side, while lemon juice and a variety of spices make the marinade that holds it all together. Once chilled, the flavors will be perfectly blended for a delicious coleslaw.

Ingredients
- 5 cups coarsely shredded cabbage (about 1 lb)
- 1 firm large tomato, seeded and diced
- 1/2 cup green pepper, chopped
- 1/3 cup green onions, sliced
- 1/2 cup lemon juice
- 1/3 cup sugar
- 1/3 cup vegetable oil
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
Instructions

In medium bowl, combine cabbage, tomato, pepper and onions.

In small saucepan, combine remaining ingredients; bring to a boil.

Pour over vegetables.

Cover; chill 4 hours or overnight to blend flavors.
