Railroad Slaw
This may have been the type of coleslaw railroad workers ate in the 1800's, or maybe it's just a simple and satisfying coleslaw recipe that everyone, including railroad workers, like to eat. Either way, it's some pretty awesome coleslaw.
Ingredients
- 3 cup firmly packed, thinly shredded cabbage
- 2 tablespoon minced onion
- 1/4 cup sugar
- 1/4 tablespoon salt
- 1/4 tablespoon dry mustard
- 1/4 teaspoon celery seed
- 1/4 cup white vinegar
- 1/4 cup peanut oil
Instructions
- Sprinkle the cabbage with the onion & sugar.
- In a small saucepan whisk together the remaining ingredients; stirring often, bring to a boil; pour at once over the cabbage; mix thoroughly.
- Cover and chill at least 4 hours before serving; keeps well for as long as 5 days. Makes 4 to 6 servings.
