If you've never heard of this unusual-sounding dessert, you're not alone!

But don't let the name dissuade you from trying this delicious apple dessert. It's one of the most delicious, comforting, and gooey-in-the-best-way desserts to come out of our test kitchen this season.

Apple pandowdy is sort of like a cross between apple pie and apple cobbler. It is unfussy like cobbler, and it uses flaky puff pastry topping that will remind you of apple pie. The filling is rich, sweet, and dripping with a browned butter sauce. Apple desserts really don't get any better than this.

Ingredients

  • 6 tablespoon unsalted butter
  • 4 pound apples
  • 2/3 cup brown sugar
  • 3 tablespoon flour, plus more for the surface of your cutting board
  • 1 tablespoon vanilla extract
  • 2 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1 lemon
  • 1 package frozen puff pastry, thawed
  • sugar (for sprinkling)
  • vanilla ice cream (optional)

Apple Pandowdy Recipe

Instructions

  1. Preheat oven to 425 degrees.

  2. Cook 6 tablespoons of butter in a small saucepan over medium heat, swirling often, until bubbling and golden, about 5 minutes; set aside.

  3. Cut your apples in small pieces and place in large bowl.

  4. Add brown sugar, flour, vanilla, cinnamon, and salt.

  5. Zest lemon into the bowl. Slice in half and add juice to the bowl as well.

  6. Toss apple mixture until combined, then transfer to a shallow 3-qt. baking dish.

  7. Drizzle brown butter over apples, keeping 2 tablespoons to use later.

  8. Dust cutting board with a light coating of flour and unfold puff pastry on floured surface.

  9. Cut puff pastry into irregular 1" pieces.

  10. Arrange pieces of puff pastry over apples, overlapping but spreading to cover almost completely.

  11. Brush pastry with remaining brown butter. Sprinkle with granulated sugar.

  12. Bake pandowdy until pastry is puffed and golden around edges, approximately 30 minutes.

  13. Reduce oven temperature to 350 degrees and continue to bake until juices are thick and bubbling and pastry is brown all over, approximately 30 minutes longer.

  14. Serve warm with ice cream.
