Blackberry Roly Poly
Ingredients
- sugar
- 1/4 cup flour
- pinch salt
- juice of 1 lemon
- 1 quart blackberries
- 2 tablespoons butter, melted
- 1/2 teaspoon ground cinnamon
- Whipped cream
Instructions
Mix 3/4 cup sugar, flour, salt, lemon juice and 3 1/2 cups blackberries. (Reserve 1/2 cup for decorating.) Roll Biscuit Dough on floured board to form a rectangle 16x9". Brush with butter and sprinkle with 2 tablespoons sugar and cinnamon, mixed together. Put blackberry mixture down center of dough, roll up and shape in a ring on greased cookie sheet. (If roll breaks, just pull together again.) Pinch ends. With scissors, make cuts in ring at 2" intervals, not cutting completely to center. Bake in preheated, 425 degree oven, for 25-30 min. or until browned. Heap reserved berries in center and top with whipped cream and a berry. Serve at once. Biscuit Dough 3 cups flour 3 teaspoons baking powder 1 1/2 teaspoons salt 1/2 cup shortening 1 cup milk (about) Sift flour, baking powder and salt. Cut in shortening until mixture resembles coarse cornmeal. Add enough milk to make a soft dough.
