COQUITO CUPCAKES WITH COQUITO WHIPPED CREAM ICING

"If there’s one drink that just scream the holidays to me, it’s Coquito. Coquito is a Puerto Rican Coconut Nog that is traditionally made around the holidays . Think eggnog without the egg and plenty of delicious coconut flavor. Oh and plenty of rum. Although, I’ve been known to make a rum free version as well for the kids to enjoy as well. It’s tradition for me to make every year. A few years ago we were sitting around in my kitchen when I decided to get a little creative. I whipped up these Coquito Cupcakes on a whim and they were devoured in minutes."
