Cheesecake Parfait
Ingredients
- 1/2 c low-fat ricotta cheese
- 4 ounces fat-free or lowfat cream cheese
- 2 TBSP brown sugar
- 1/2 tsp vanilla
- 2 c raspberries
- 2 c blackberries
Instructions
Blend first 5 items until smooth. Set aside. In a blender or processor, put in blackberries and brown sugar and lightly "pulse", to lightly chop. In parfait glasses, layer the two mixtures alternately. For variety, use different fruits and/or add some miniature chocolate chips to the cheese mixture. NOTE: Frozen fruit works quite well.
