Cherry Latkes
Ingredients
- 1 cup flour
- 1/2 teaspoon baking powder
- 2 eggs
- 4 tablespoons milk
- 1 teaspoon almond extract
- 1 cup canned cherry pie filling
- oil
Instructions
Makes 16 to 18. Mix flour and baking powder. Make a well in the center and add eggs, milk and almond extract. Mix well. stir in cherry pie filling. Heat 1/8 oil in a large nonstick skillet over medium-high heat until a drop of pie filling mixture sizzles. Gently drop rounded tablespoonfuls into hot oil being careful not to crowd. Cook 3 to 4 minutes a side until crisp and browned.
