Churro Funnel Cakes

Ingredients
- 2 baking mix (such as Bisquick)
- 2 eggs
- 1 cup milk
- 1/4 cup granulated sugar
- 2 tablespoon cinnamon
- vegetable oil for frying
Instructions

In a shallow dish, mix sugar and cinnamon. Set aside.

In a large heavy pot, heat oil over medium-high heat to 350 degrees F.

Meanwhile, combine baking mix, eggs, and milk in a large bowl. Transfer the mixture in batches to a bottle with a squeeze top (like a clean ketchup bottle) for easy dispensing.

Swirl small amounts of the batter into the oil to create funnel cakes. The batter will cook quickly. Flip over carefully, once.

Remove from oil to a paper towel-lined tray, and then into the cinnamon sugar mixture.

Allow to cool slightly. Serve while warm.
