Coeur a la Creme
Ingredients
- 1 lb. cottage cheese
- 3 ounces cream cheese
- 1 cup confectioners sugar
- 1 1/2 Tbsp lemon juice
- 1 cup whipping cream, whipped into soft peaks
Instructions
Blend cottage cheese and cream cheese until it is uniform and smooth. Add sugar and lemon juice. Fold a little whipped cream into the cheese to lighten it. then gradually fold the rest of the whipped cream into the cheese. Spoon into a sieve lined with cheesecloth. Let drain overnight. Serve surrounded by fruit or with raspberry coulis.
