Cupid's Ice Cream Sandwiches

NotesYou could use a larger heart-shaped cookie cutter for different sized ice cream sandwiches. Optionally, roll the side of each sandwich into sprinkles before freezing.

Ingredients
- 1 3⁄4 cups all-purpose flour
- 3⁄4 cup cocoa powder
- 3⁄4 cup butter, softened
- 2⁄3 cup sugar
- 2 large eggs
- 1⁄2 teaspoon vanilla extract
- 2 pints ice cream, softened (any flavor)

Combine all-purpose flour and cocoa powder.

In a large bowl, combine softened butter and sugar and beat with a mixer on high speed until fluffy.

Beat in eggs and vanilla extract until well blended.

Reduce the mixer speed to low and beat in the flour mixture.

Divide dough in half, wrap with plastic wrap and refrigerate for an hour.

Line 9 x13-inch baking pan with plastic wrap. Transfer ice cream from its package to the baking pan and smooth ice cream evenly into pan with a spoon. Cover with plastic wrap and place it in your freezer.
