Floating Islands

Ingredients

  • 1/4 cup sugar
  • 1 Tbsp. cornstarch (heaping spoonful)
  • 1/4 teaspoon salt
  • 2 egg yolks
  • 2 cup milk
  • 1 teaspoon vanilla

Instructions

Combine first three ingredients in pan. Mix in yolks. Gradually blend in milk. Cook over medium heat, stirring constantly, just until it starts to bubble and thicken. Do not overcook. Pour into bowl. When cool add vanilla. Take the 2 egg whites and beat until foamy. Be sure they are room temperature and use a glass bowl. Gradually add 1/3 cup sugar while beating. Beat until stiff peaks. Fold gently into custard when it has set so that it is not incorporated into the custard. Needless to say, must be stored covered in the refrigerator.
