Frozen Coconut Parfaits
Ingredients
- 12 Tbsp water
- 6 Tbsp sugar
- 1 cup flaked coconut
- 2 tsps vanilla extract
- or coconut extract
- 1 cup heavy cream
- garnish:
- 1/4 cup toasted sliced almonds
- 1/4 cup toasted coconut
Instructions
Bring water and sugar to a boil and boil 5 minutes till syrupy. Remove from heat and cool about 10 to 15 minutes. Stir in coconut and vanilla. Cool completely. whip cream to soft peaks and fold into the mixture. Divide mixture into dessert dishes. Freeze one hour or more. before serving, remove from freezer and sprinkle with some of the almonds and coconut. Tasty and very refreshing. Recipe may be multiplied as needed.
