Green Eggs and Ham Cupcakes

"In honor of Reading Week and one of my favorite childhood books, I just had to share these adorable Green Eggs & Ham cupcakes! They are simple to make and can really use any type of cake, so feel free to use any flavor you’d prefer! Today was the kick-off of the event and also an extra special day for us as I had the chance to go in and read to Zac’s class. I wasn’t sure what to read but then remembered one of my absolute favorite books from when I was little- Green Eggs and Ham!"
