Lemon Raspberry Fruit Pizza
"Lemon Raspberry Fruit Pizza is made with a lemon sugar cookie crust that is topped with a cream cheese layer, fresh raspberries and a delicious raspberry glaze! This fruit pizza recipe is so easy to make by using a lemon cookie mix and the glaze is made with raspberry jello! There is something about the combination of raspberry and lemon that is just so yummy! I have been making lemon everything these last few weeks because I am so excited that spring is finally here and now I’m craving everything citrus. And fruit. I absolutely love fruit and I love finding new ways to eat it!"

Ingredients
- CRUST
- 1 box Krusteaz Meyer Lemon Cookie Mix
- 1 cup butter, softened
- 1 egg
- CREAM LAYER
- 4 ounce cream cheese, softened
- 1 cup sour cream
- 1 teaspoon vanilla
- 1 cup powdered sugar
- RASPBERRY GLAZE LAYER

Prepare the glaze by putting the water, sugar and cornstarch in a small saucepan and heating over medium heat until thick and clear.

Add the Jello and stir until well combined. Set aside to cool completely.

Place cookie mix, butter and egg in a mixing bowl and mix until well combined. Roll the dough onto a well greased 14” pizza pan. Sprinkle the enclosed sugar packet on top of the crust. Bake at 350° for 12-14 minutes, until the edges begin to turn a light golden brown.

Let the crust cool completely.

Prepare the cream layer by mixing the cream cheese, sour cream, vanilla and powdered sugar together until smooth. Spread on top of the cooled crust.

Arrange the raspberries on top of the cream layer and then pour the cooled glaze on top. Refrigerate until ready to serve.
