Muffin Pan Apple Crumb Cakes

Ingredients
- 3 cup flour
- 1 cup light brown sugar, not firmly packed
- 1 cup sugar
- 1 tablespoon cinnamon
- 1/2 cup vegetable oil
- 1/4 cup applesauce
- 1 teaspoon kosher salt
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 1/2 cup peeled, diced apple (about 1 large or 2 small apples)
- 1 cup buttermilk
- 1 egg
Instructions

To Make: Line muffin pan with paper liners. Combine flour, sugars, cinnamon, oil, applesauce, salt, nutmeg and ginger. Measure 11/2 cups of the mixture and place in a bowl, reserve for topping.

To remaining mixture add the baking soda, powder, apples, buttermilk and egg. Stir until barely combined.

Spoon mixture into muffin tin and top with crumbs, lightly pressing them into the batter.

To Frisp: Freeze and when solid, remove from muffin pan, place in gallon Frisper bag and frisp.

To Serve: Preheat oven to 350 degrees F. Remove muffins from Frisper bag and place in a muffin pan, bake until cooked through and brown on top, about 30 minutes.

Gently remove from pan and let cool 10 minutes before serving.
