Rainbow Truffles
"These fun rainbow desserts are not only delicious but very easy to make! You may want to double the recipe too because these St. Patrick’s Day Rainbow Truffles won’t last long, make a batch for a crowd or keep them for just you! They only take a few minutes to make require only THREE ingredients including; golden cream filled cookies, cream cheese and chocolate to coat. Don't forget about the rainbow sprinkles though! Consider green or gold sprinkles, which would be just as nice."

- 36 golden cream filled cookies
- 8 ounce cream cheese, softened to room temperature
- 2 drop gel food colouring in rainbow colours
- 16 ounce Dark chocolate, melted
- 16 ounce White chocolate, melted
- 2 pinch Rainbow Sprinkles!
