Savory Bread Pudding
Ingredients
- 2 tablespoon butter or margarine
- 1 cup finely chopped onion
- 1 pound sliced assorted mushrooms OR
- 1 pound sliced white mushrooms
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup finely chopped parsley
- 8 ounce French bread, cut in 1/2" slices
- 6 large eggs
- 3 cup milk
- 6 1/2 ounce light garlic-and-herb spreadable cheese
- 1/2 cup freshly grated Parmesan cheese
Instructions
Heat oven to 325 degrees. Grease a shallow 2 1/2 quart baking dish. Melt 1 tablespoon butter in large nonstick skillet. Add 1/2 the onion and 1/2 the mushrooms; saute over medium-high heat 4 minutes or until tender and browned. Place in medium bowl. Repeat with remaining butter, onion and mushrooms. Stir in salt, pepper and parsley. Scatter 1/2 the mushroom mixture in prepared dish. top with bread, slices slightly overlapping. Scatter remaining mushroom mixture over top. In a large bowl, whisk eggs, milk and cheese until blended (small bits of cheese may remain). Pour evenly over bread. Sprinkle with Parmesan cheese. Bake 1 hour or until puffed and golden brown, and a knife inserted near center comes out clean.
