Spiced Pear Puff (clafouti)
Ingredients
- 1 3/4 t five spice powder
- 3/4 c sugar
- 4 T butter
- 2 c peeled, cored, and thinly sliced ripe Bosc or Anjou pears
- 1/3 c coarsely chopped crystallized ginger
- 3 large eggs
- 1 1/4 c milk
- 1 1/2 t vanilla
- 2/3 c flour (all-purpose)
Instructions
Preheat oven to 375 F. Combine the spice powder with 1/4 c of the sugar in a measuring cup. Melt 2 T of the butter in a skillet. Add the pears, half of the spice/sugar mixture, and the ginger. Toss well to coat the pears. Saute just until the pears are tender, about 2 minutes. Place the remaining butter in a 10-12 inch deep dish pie pan and melt in the oven. Whisk together the eggs, milk and vanilla ni a mixing bowl. Whisk in the remaining sugar. Whisk in half the flour, blending until smooth. Repeat with the remaining flour. Remove the pan from the oven. Carefully pour in the batter, then evenly distribute the pear mixture on top. Sprinkle with remaining spice-sugar mixture. Bake for 45 minutes or until golden brown and puffy. Serve hot or warm.
