    Strawberry Shortbread Cakes

    Ingredients

    • 2 sticks unsalted butter (room temp)
    • 1/2 cup confectioners sugar
    • 2 cups unbleached all purpose flour
    • 1/4 tsp salt

    Instructions

    Preheat to 350 degrees. Cream the butter til fluffy, about two minutes. Gradually add confectioners sugar and beat until well combined. Add flour and salt, mixing until just combined. Do not overmix. On well sugared surface, roll out dough 1/4 inch thick. Using 4 1/2 inch fluted biscuit cutter. Cut into rounds. Bake for 20 to 25 minutes. Should be firm but still pale. Cool on rack and top with strawberries and cream.
