Superb Rye Flour and Dry Berries Healthy Cookies
"I am so much into trying new recipes, new tastes, new ideas and that’s purely because I ?? food and I ?? cooking. I made these darling cookies many times before and I’ve used various ingredients which I’m going to mention in the recipe notes as there are many things you could add and juggle with and there are some which you should not. I’ve done the trial and error bit so please take my word for it.? But firstly, let me tell you a little more about those beauties and how they came about."
Notes• This recipe yields anything between 20-30 cookies depending on size.
• I did mention earlier that there are other ingredients that could and should be used and alternated or juggled with. Whatever terminology you want to use but ultimately, play with those as much as you like. Mix and play with combinations.
• You could split the mixture and add some (1-2 tbsp) cacao powder to half and then combine the two of them into nice and marbled ones;
• you can also use white/dark chocolate chunks if you don't have chips.
• coconut oil combined with butter instead of butter only (could do with a proportion of 50:50).
• I've added 2-3 tbsp flax seeds in the past;
• I've added seeds and/or nuts instead of dry fruits or even mixed them
• you can try adding 3-4 tbsp crunchy peanut butter
• I've also tried it with adding 3-4 tbsp speculoos/spéculos or the Lotus Biscoff spread.
I'm just telling you, whatever you decide to do, go wild and adventurous and if you do go for something unmentioned above just let me know so I'll be trying that too. There is also a must not replace and that is the butter. Use only butter or coconut oil and don't use margarines, oil or anything else. This cookies will not be the same otherwise.

Ingredients
- 90 g brown sugar
- 2 eggs
- 190 g oats
- 100 g dark rye flour
- 100 g white flour I used organic- self raising
- 120 g chocolate chips dark
- 3/4 tsp soda bicarbonate
- 1/4 baking powder
- 1 tsp cider vinegar or lemon juice
- 4 tbsp buttermilk

Preheat the oven at 190°C/Gas Mark 5/375°F. Prepare an oven tray lined with greased or ungreased baking sheet.

Using an electric freestanding or hand mixer, beat the butter or coconut oil with sugar together until light and slightly fluffy.

Add the eggs, one by one mixing well after each egg.

In a separate bowl combine the oats with the flours and the salt. To this also add the baking soda and the soda bicarbonate combined with the vinegar or lemon juice.

Add gradually the flour mixture to the butter one mixing well at a low-speed until it is all nicely incorporated.

Add and stir in the dried berries and the chocolate chips.

With the help of a teaspoon shape the mixture into little clusters and place on the baking sheet in the prepared tray leaving tiny spaces (approximately 1 cm) between cookies.

Optionally once you have gone through half of the mixture add 3 to 4 tablespoons of desiccated coconut to the remaining half so you could have Sam with coconut if you fancy.

Bake for 12-18 minutes (depending on their size) or until golden brown.
