Mint Thai Iced Tea

If you've never tried Mint Thai Iced Tea, it's time to make your very first batch! This easy Thai tea recipe is so refreshing and different, you'll begin to crave it more than regular iced tea in no time. What makes Thai iced tea stand out from regular tea recipes is its use of coconut milk and sweetened mint-infused simple syrup. The base for Thai teas is chai, which is a naturally spicy and slightly sweet, caffeinated tea originating in India. To offset the sometimes overpowering spiciness of this tea blend, the mint simple syrup and coconut milk help to balance the flavor, making this one of the most delicious iced beverages you'll ever try. You can also enjoy this tea hot by omitting the extra step of chilling the pre-brewed tea. Either way, this recipe is a dream!

Ingredients

  • Mint Infused Simple Syrup:
  • 1 cup water
  • 1 cup granulated sugar
  • 2 springs fresh mint leaves
  • Thai Iced Tea:
  • Strongly brewed chai flavored iced tea, chilled
  • simple syrup to taste
  • coconut milk
  • ice

Instructions

  1. Heat water in the microwave in a large measuring glass for 3-4 minutes.  Be careful, it may not appear to be boiling but will be very hot.  Stir in granulated sugar until completely dissolved.  Add mint leaves and place into the fridge to cool completely.

  2. In a large glass, pour desired amount of coconut milk into the bottom. Top with chilled, pre-brewed, chai. Stir well and add ice. Add simple syrup to sweeten to taste.  Serve immediately.
