Vegan Shamrock Shake

"St. Patrick’s day is this weekend, and to celebrate without a whole bunch of sugar I made this healthy shamrock shake made with spinach and bananas. Shamrock shakes are a classic drink around st. Patrick’s day, but they are made with ice cream and have a lot of sugar in them. This is a great st. Patrick’s day snack that you can enjoy guilt free. This vegan shamrock shake is made like a green smoothie, but uses peppermint extract to give it the minty taste that shamrock shakes have. If you want to make this look more like a shamrock shake, after pouring the shake into glasses you can top it with coconut whipped cream. I used fresh bananas in these, so I needed to use more ice cubes to get the right consistency, although if you use frozen bananas you won’t need as much ice cubes."

Ingredients

  • 3 medium Bananas
  • 1 cup Fresh Spinach
  • 1 cup unsweetened almond milk
  • 1 cup Ice cubes
  • 1 teaspoon peppermint extract
  1. Place all ingredients into a blender.

  2. Blend until smooth, divide mixture into glasses.
