Nutty Topper

Ingredients

  • 70g pkt sliced almonds
  • 1/4 cup pine nuts
  • 1/4 cup sesame seeds
  • 1 Tbs oil
  • 1 tsp chilli paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 Tbs fennel seeds
  • 1/2 tsp salt

Instructions

Mix almonds, pine nuts and sesame seeds together. Heat oil in a fry pan. Add chilli paste and fennel seeds, stirring to combine. Add almond mixture and toss often over a low heat for 2 3 minutes or until nuts have stared to brown and smell fragrant. Sprinkle over salt and cool. Uses:- Sprinkle over cooked cauliflower, broccoli or potatoes. As a coating for racks of lamb, or sprinkle through meat and vegetables stir-fry.
