Ingredients
- Italian Baked Eggs
- 1/2 cup marinara sauce
- 2 large eggs, room temperature
- 3 tablespoon heavy cream
- 1/8 cup shredded Mozzarella cheese
- 2 tablespoon grated Parmesan
- salt and pepper, to taste
- 2 tablespoon basil leaves, chopped
- Mexican Baked Eggs
- 1/2 cup salsa
- 2 large eggs, room temperature
- 3 tablespoon heavy cream
- 1/8 cup shredded Mozzarella cheese
- 1/8 cup shredded Mexican blend cheese
- salt and pepper, to taste
- 1 green onion, chopped
Instructions

Preheat oven to 425 degrees. Lightly spray 2 oven safe bowls with nonstick spray.

Pour sauce (or salsa) in the bottom of each bowl. Top with 2 eggs, heavy cream and respective cheeses. Season with salt and pepper.

Place into the oven until egg whites are cooked through, about 10 minutes. Yolks will still be slightly over easy. Leave in the oven longer for harder cooked yolks.

Serve immediately, garnish with basil (Italian) or green onions (Mexican).
