One Eyed Jack
This easy breakfast recipe is also sometimes called Egg In The Hole because it's a piece of toast with an over easy egg in the middle. One Eyed Jack is a term used during the Great Depression era to describe this cheap breakfast idea. Simply butter a piece of bread, cut a hole out of the middle, and fry an egg inside! Sop up the runny yolks with the toast and you'll wonder why you didn't try it sooner.

Ingredients
- 1 slice your favorite bread
- 1 tablespoon butter
- 1 egg
- salt and pepper, to taste
Instructions
- Cut out the center of a piece of bread with the rim of a glass or a biscuit cutter. Heat the butter in a skillet, then place the piece of bread in the pan.
- Crack the egg directly in the center of the hole and cook for about a minute. Sprinkle with salt and pepper, then flip the bread over and continue cooking until desired doneness, until the bread is well toasted.
