Scotch Eggs
Ingredients
- 12 ounce bulk pork sausage
- 4 eggs, hard-boiled
- 1 egg, beaten
- matzo meal, for coating
- oil for deep frying
Instructions
Form sausage meat around hard boiled egg in an even layer. Dip in beaten egg, then roll in matzo meal, or flour. Refrigerate 20 minutes. Preheat oil in deep fryer to 325 degrees. Deep fry, two at a time, until golden brown all over, about 5- 6 minutes. Drain on paper towel and serve.
