Layered Greek Moussaka

But the main components of this dish are layered vegetables with a layer of meat sauce, topped with a thick and creamy béchamel. Ingredients
- 1 large eggplant (sliced)
- 3 large potatoes (peeled and sliced)
- 1 red onion (chopped)
- Olive oil
- Salt and pepper, thyme
- 1 pound ground beef
- 1 small onion (diced)
- 1 garlic clove (minced)
- 1 tablespoon olive oil
- 1 heaping tbsp of tomato paste

Wash and peel the potatoes.

Cut into slices, about 1/4 inch thick and put in a bowl.

Slice the red onion and add it the to bowl with the potato slices.

Add 1 tbsp of olive oil, salt and pepper, a pinch of dry thyme.

Layer the potatoes in an oven safe dish of 12 inches by 9 inches.

Bake uncovered in a preheated oven at 375F for 20 minutes.
