Spinach And Mushrooms Vegetable Enchiladas
"These vegetable enchiladas are made with spinach, mushrooms and creamy delicious cheeses for a unique taste sensation you will want to try right away. This delicious recipe starts with making the vegetable enchilada filling by sauteeing onion and mushrooms then adding chopped baby spinach. Once the filling is made, you’ll fry the corn tortillas to soften them, then you’ll head straight to assembly. Filling two casseroles, there's enough to feed eight people.
