Mustard Crusted Tuna
This recipe for Mustard Crusted Tuna will make you a tuna addict for life, and it’s one habit you’ll never have to quit! Tuna recipes have lots of health benefits, not to mention they taste delicious! This is one of the simplest seafood recipes we've found, but that doesn't make it any less tasty!

Ingredients
- 4 8 oz. tuna fillets (or swordfish or halibut)
- 4 large eggs
- 2 tablespoons Dijon mustard
- 1 teaspoon fresh lemon juice
- 3/4 cup flour
- 1 3/4 cup seasoned breadcrumbs
- 2 tablespoons dried (powdered) mustard
- 1 teaspoon garlic powder
- salt and pepper to taste
- 3 tablespoons butter
Instructions

In a medium bowl, beat the eggs with the Dijon mustard and lemon juice.

In another medium bowl, sift together the flour, breadcrumbs and dried mustard with the salt and pepper.

Place each piece of tuna first in the egg mixture, coating each side. Then place in the breading mixture, thoroughly coating all sides of the fish.

Heat butter in a large skillet with a lid, over medium heat. Add the breaded fish and let brown on one side for five minutes, covered.

Flip and cook for another five minutes, covered, flipping once more until done. Fish is done when moist, but flaky and opaque throughout the meat.

We grilled our tuna, instead of frying it and it was really very very good! It is wonderfully quick and easy to prepare, nothing fiddley at all in the preparation, and the resulting is a beautifully light and delicious meal. Our accompaniments were flavored rice and fresh garden salad. We love fish and this is definitely a meal that we will have again and again.
