Ingredients

  • 32 ounce Red snapper fillets
  • 1 cup melted butter
  • 2 clove garlic
  • 4 ounce cherry tomatoes
  • 1 lemon
  • 1 cup light white wine
  • Fresh mint leaves
  • Salt and pepper to taste

Instructions

  1. Place the snapper on a buttered baking pan.

  2. Season the fillets with salt and white pepper.

  3. Brush with melted butter.

  4. In a bowl, combine minced garlic, minced mint, and spoon on top of each fillet.

  5. Top each fillet with lemon slices and cherry tomatoes.

  6. Add white wine to the pan.

  7. Bake at 400 degrees Fahrenheit for 15 minutes.

  8. Remove and transfer to a platter and serve.
