Brazilian Bahian Muqueca Shrimp and Cod

Ingredients
- 1 pound fresh medium-sized prawns,shelled, deveined
- 1 pound cod fish, sliced to medium size chunks
- 6 tablespoons olive (or vegetable) oil
- 2 tablespoons dende oil (West African palm oil)
- 2 large yellow onion, finely chopped
- 3 cloves garlic, crushed
- 2 tablespoons fresh lemon juice
- 4 large tomatoes, peeled, seeded, chopped
- 3 tablespoons chopped cilantro
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1 fresh red hot pepper
- 1/2 can coconut milk (7 fl. oz.)
Instructions
Serves 4-6.
- Heat the vegetables oil in a medium-sized pot and stir-fry the onion until golden brown.
- Add the garlic, dende oil, cayenne pepper, cod and prawns. Stir-fry for 3 minutes.
- Add the salt, lemon juice, tomatoes, and coconut milk. Simmer for 8-10 minutes.
