    Brazilian Bahian Muqueca Shrimp and Cod

    Ingredients

    • 1 pound fresh medium-sized prawns,shelled, deveined
    • 1 pound cod fish, sliced to medium size chunks
    • 6 tablespoons olive (or vegetable) oil
    • 2 tablespoons dende oil (West African palm oil)
    • 2 large yellow onion, finely chopped
    • 3 cloves garlic, crushed
    • 2 tablespoons fresh lemon juice
    • 4 large tomatoes, peeled, seeded, chopped
    • 3 tablespoons chopped cilantro
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon salt
    • 1 fresh red hot pepper
    • 1/2 can coconut milk (7 fl. oz.)

    Instructions

    Serves 4-6.

    1. Heat the vegetables oil in a medium-sized pot and stir-fry the onion until golden brown.
       
    2. Add the garlic, dende oil, cayenne pepper, cod and prawns. Stir-fry for 3 minutes.
       
    3. Add the salt, lemon juice, tomatoes, and coconut milk. Simmer for 8-10 minutes.
