"This crawfish recipe is worth trying, a new way of incorporating flavor into the typical creole recipe. If you love the food of New Orleans, try this unique take. You can add other spices such as marjoram, cumin seeds, and cinnamon to add some more yumminess. The recipe can be tweaked with shrimp, crab, and other shellfish. You can also add some chili flakes to intensify the heat. You can even use different kinds of potatoes and yam to add body to the recipe."

Ingredients

  • 1 tablespoon peppercorns
  • 2 tablespoon whole cloves
  • 1 tablespoon five spice
  • 1 pound salt
  • 5 gallon water
  • 4 tablespoon smoked paprika
  • 1 tablespoon onion powder
  • 1 tablespoon dried oregano
  • 6 dried bay leaves
  • 10 pound live crawfish
  • 2 pound sweet potatoes
  • 2 pound sweet corn
  • 2 pound Chorizo
  • 2 cup white wine

Instructions

  1. Place peppercorn, cloves, five-spice, paprika in a spice grinder and grind for 15 seconds.

  2. Fill a pot with water and add the ground spices, salt, onion powder, oregano, white wine, and bay leaves. Cover and bring to a boil.

  3. Rinse the crawfish with cold water and repeat the rinsing process five times.

  4. Once the seasoned water comes to boil, add the sweet potatoes, sweet corn, and chorizo. Cover and cook for 15 minutes.

  5. Add the crawfish, cover and cook for 3 minutes.

  6. Turn off the heat and let it remain covered for another 10 minutes before draining well and serving.
