Salmon Patties
Ingredients
- 14-1/4 oz can pink salmon, bones and cartilege removed (Do not drain)
- 2 eggs
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- salt and pepper
- dash garlic
- dash season salt (optional)
- 2 T corn meal
Instructions
Mix all ingredients together. Add JUST enough flour to hold together. Be careful - too much will make them bland and dry! Form into 1/2 inch thick 3 inch diameter patties. Heat oil in frying pan over med-high heat. Place patties in oil and cook until lightly browned on bottom (5 min or so), turn and brown on the other side. Turn heat down to low and cook an additional 5 minutes. Drain in paper towels.

I love salmon patties. I usually make it once a week. They are so easy to make. I only use one egg and use equal parts of flour and cornmeal, about 1/3 cup each. They are delicious and even better the next day for lunch in a sandwich. Yum Yum.
