Simple Spinach-salmon Pinwheels

"Salmon and spinach are a perfect match. They are great together whether they are sauteed or even baked. You won’t regret taking a chance on this recipe. You might be scared of canned fish, but this is the perfect way to use it and make it shine for a perfect appetizer treat. You can add some chopped parsley for an Italian flavor. You may also use orange zest or lime zest if you are not fond of using lemons. This recipe pairs wonderfully with white wines, especially light, and crisp white wines. "

Ingredients

  • 1 Sheet puff pastry
  • 6 ounce canned Tuna in oil
  • 2 ounce white onion
  • 2 teaspoon olive oil
  • 1 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 1 teaspoon chili flakes
  • salt and pepper to taste
  • 1 cup spinach
  • 1 ounce dill

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. Prepare the baking tray by greasing it with cooking spray.

  2. In a heated pan, add oil and saute the finely chopped onions until caramelized. Set aside to cool.

  3. In a bowl, mix altogether drained can salmon, cooked onion, cheese, finely chopped spinach, dill, chili flakes, and lemon zest.

  4. Top the puff pastry with salmon mixture and spread evenly. Leave some space at the edges and slowly press down the mixture.

  5. Start rolling the pastry

  6. Using a knife cut the pinwheels into 1/2 inch thick sections.

  7. Bake the pinwheels for 15 minutes.

  8. Serve warm
