Tuna Cakes
Ingredients
- 1 can tuna, drained
- 3 cup bread crumbs
- 2 tbsp lemon or lime juice
- 1 tsp cayenne pepper
- 1 tbsp mayonnaise
- 4 tbsp sweet pickle relish
- parsley, chopped
- 1 onion, chopped
- 2 eggs
- 2 stalks celery, chopped fine
Instructions
Mix ingredients until they hold together, but not too dry or too mushy. If too dry add a little water by the Tablespoon until the desired consistency is achieved. If too moist add more bread crumbs. Fry until golden. Goes well with french fries and cocktail sauce.
